Autumn Eats Week: Autumn Harvest Salad


With fall and the cooler months coming up, we often think of heavier meals. But this salad is the prefect  way to have the fall flavors while having a lighter meal.

  • Mixed greens
  • Beets
  • Pears
  • Walnuts
  • Dried cranberries
  • Sweet potato
  • Olive oil
  • Salt
  • Apple cider vinaigrette


  1. For sweet potato croutons:
    1. Preheat oven to 350
    2. Cut into cubes
    3. Place on cookie sheet
    4. Drizzle olive oil and salt
    5. Cook for 20 minutes
  2. Simply create your salad
  3. Enjoy!

  1. It looks simple but SO delicious! It’s getting hot over here but I’m going to try this out even though it seems more like an autumn salad I think it will be great for the summer days here! Thank you for sharing this recipe.
